VANILLA CHIA OATMEAL
As many of you know, getting healthier is important to me. I’ve struggled with my weight pretty much my entire adult life. The struggle is real. Currently, with my back injury finally getting better, I’m starting to walk more and once all better I can go to they gym. Most of mornings start with a healthy breakfast and today I’m sharing my recipe for vanilla chia oatmeal. As a Jamaican, I grew up eating oatmeal porridge as a child. As an adult, I’ve tried to make it healthier in many ones and this one is one of them. I love pottery and the bowl I photographed the recipe in is from Kindred Made. It’s artfully rustic and I love the little hole on handle where my thumb easily fits in. I take food in the car with this bowl all the time because it’s so easy to carry.
- 1¾ cup milk
- 1 cup whole oats
- ¼ cup white chia seeds
- ½ teaspoon pure vanilla extract
- ¼ teaspoon cinnamon
- ¼ cup sweetened condensed milk
- A dash of salt
- In a medium sauce pan on medium to low heat, cook the oats with the water, milk, vanilla and cinammon for 5 mins. Turn the heat down to low and add in the chia seeds and cook for 3 more minutes. Add a dash of salt and stir. Finish by adding sweetened condensed milk.
