JAMACAIN STYLE CHICKEN SOUP

The colder months are the ideal time for serving up chicken soup wouldn’t you say loves. If you follow me on Instagram, then you would have seen me make this recipe on my instastory two times already this winter. It’s a quick and easy recipe for Jamaican style chicken soup for the soul. As Jamaicans, we eat very hearty and often times with lots of vegetables. The recipe I’m sharing is a classic Jamaican style soup, but I’ve added swiss chard for an added boost of health. This is ideal for making for your family when you are short on time but not short on the idea of making something with love. NOTE: Finally, for more authentic Jamaican flavor, add in this Grace brand soup base and 2 sprigs of fresh thyme. (these will give your chicken soup a truly authentic Caribbean taste, particularly the soup base because of its seasonings and thickening ability).

Serves: 4-5 servings depending on the bowl size
Ingredients
  • SOUP
  • 2 boneless chicken breast
  • 4 cups of chicken stock/broth
  • ½ bunch of swiss chard - chopped (feel free to use the entire bunch if you love healthy greens like I do)
  • ½ cup chopped onions
  • ½ cup chopped carrots
  • ½ cup acorn squash
  • 2 cloves of fresh garlic (peeled and diced or smashed)
  • Salt + Pepper to taste
  • Canola Oil
  • DUMPLINGS
  • 1¼ cups all purpose flour
  • ½ cup water
  • pinch of salt
Instructions
  1. Salt + pepper both sides of the chicken breast. Pour 2-3 tablespoons of oil in a large soup/pasta or cast iron pot, cook the chicken on medium heat for 5 minutes on each side. Remove chicken, cut in chunks and set aside. If it's a little pink still, it's OK. It will cook thoroughly throughout the cooking process.
  2. In the same pot, add the vegetables (EXCEPT THE SWISS CHARD) cook for 7 minutes on medium heat, lightly salt and pepper this.
  3. Next add in the chicken broth and cook for another 7 minutes. IF YOU HAVE THE GRACE SOUP BASE AND THYME, NOW IS WHEN YOU WOULD ADD IT.
  4. ADD DUMPLINGS:
  5. To make the dumplings:
  6. In a small bowl add the flour and water and mix until a dough is formed. If you need to add a little flour at a time on your hands while rolling into little dumpling balls or spindles, feel free to do so. This will make the dumplings less sticky on your hands while you roll them. Cook for 3 minutes.
  7. Lastly add the chicken back in and and cook for 5 mins.
  8. To finish, add the swiss chard and cook for 5 more minutes.
  9. Serve hot to warm the soul 🙂
